Cedar Roasted Salmon

8-ounce salmon filet
one cedar plank
Apple horseradish
Salmon glaze

Apple Horseradish
4 tablespoons sour cream
1/2 apple
2 teaspoons lemon juice
2 tablespoons horseradish
1/4 teaspoon minced garlic
Mix sour cream, lemon juice, horseradish and garlic in bowl. Grate apple and mix with other ingredients and refrigerate.

Salmon Glaze
1/2 cup maple syrup
1/4 cup lemon juice
1/2 cup soy sauce
1 Teaspoon chopped ginger
1 Teaspoon chopped garlic
Place ingredients in a small sauce pot and bring to a slow boil, and let reduce by half.

Directions
Soak cedar plank in water at least 30 minutes. Prepare grill (high heat). Heat oven to 350 degrees. Place cedar plank on grill and place salmon filet on plank. The water from the plank will steam out and through the salmon, beginning the cooking process. Baste fish with salmon glaze. When plank starts to char and smoke (about 5 minutes) remove from grill and baste one more time. Place in oven for 10 to 15 minutes until salmon is cooked through. Remove from oven and place on plate. Add a little apple horseradish and serve.
